Baked Chicken Normandy My Way

I always wondered why we layer food in a casserole dish. After all, I know when I take a bite, it is of all those layers and tastes the same as if the casserole had been mixed all together before cooking, right? Well guess what? I did exactly that, no layering in this recipe and it was delicious!

Spray a 9” x 13” oven safe dish with cooking oil.

In a large bowl add the box of stuffing, melted butter and chicken broth. Toss to combine and set aside until all of the liquid is absorbed.

In another large bowl add the onion, celery, chicken, mayonnaise, cream of mushroom soup, salt and pepper. Toss well to combine.

Add the soup mixture to the stuffing bowl and toss to combine.

Pour the mixture into the prepared dish.

In a bowl whisk together eggs with the milk.

Pour the milk mixture over the stuffing mixture.

Bake uncovered at 325º for 45 minutes.

Sprinkle with as much cheese as you want. Return casserole to the oven and bake 10 minutes more.

Turn off the oven and turn on the broiler. Broil, watching carefully, until the cheese is a golden brown.

Then serve!

  • 1- 6 oz box of Stove Top stuffing, uncooked
  • 4 Tbsp butter, melted
  • 1-14.5 oz can of chicken broth
  •  
  • 1 small onion, finely chopped 
  • 1/2 cup celery, finely chopped
  • 1 – 10.5 oz cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1/2 tsp salt, or to taste
  • 1 tsp pepper, or to taste
  • 3 cups cooked chicken, chopped small
  •  
  • 2 large eggs
  • 1½ cups milk
  • 1 cup grated cheddar cheese (or to taste)
