Oil Free Tomato Onion Salad

Since it is the end of the garden season, I decided to make my husband this delicious Oil Free Tomato and Onion Salad. This was so full of flavor with fresh basil, garlic, onion, oregano and a red wine vinegar marinade that it didn’t need any oil.

In a medium bowl add the onion, basil, garlic, salt, pepper and oregano. Toss to combine.

Add the water and red wine vinegar then toss well.

Add the tomatoes.

Toss well then refrigerate for at least 3 hours then serve.

Ingredients

  • 2 pounds fresh Italian tomatoes, cut into bite sized pieces
  • 1 medium red onion sliced thinly (or your favorite onion)
  • fresh basil large handful, then chopped
  • 2 cloves garlic minced
  • 1/3 cup red wine vinegar
  • 1/4 cup water
  • 1 1/2 teaspoons salt, or to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper

Directions
