How can you resist making a slow cooker meal made with chicken thighs, potatoes, and andouille sausage then topped off with onions and Rotel. Not crazy about andouille sausage, exchange it with Kielbasa. The liquid was so delicious that I am going to have it tomorrow for lunch along with some of the leftovers.
My slow cooker is becoming my best friend since my kitchen remodel is moving full speed ahead. We are cooking in the dining room on a folding table.
Place the chicken thighs on the bottom of the slow cooker.
Place the potatoes on top.
Salt and pepper to taste, I used 1 tsp. salt and 1/2 tsp pepper.
Add the andouille sausage.
Add the sliced onions.
Combine the Rotel, garlic, brown sugar and chicken broth in a bowl.
Pour the tomato mixture evenly over the onions and cook on low for about 6 hours or until chicken is 165º and vegetables are tender, then serve.
