Kielbasa, Potato and Vegetable Casserole

Try this delicious Kielbasa, Potato, and Vegetable Casserole recipe that’s easy to prepare and packed with flavor using all your favorite spices and herbs. Perfect for your family meals!

Spray a 9”x 13” casserole dish with oil.

Slice the Kielbasa. Peel the onions then cut into larger than normal pieces.

Place the thawed, frozen vegetables on the bottom of the dish.

Steam-cooked and drained potato chunks in a red colander placed over a green cutting board, set on a granite countertop.

Peel and cut potatoes into 1” pieces then par boil for 10 minutes and drain.

Place the potatoes on top of the vegetables. Add whatever seasoning and herbs your family loves.

Add the Kielbasa and onion on top.

Add pats of butter to the top, I used an entire stick of butter.

Seal tightly with foil. Bake in a preheated 375º oven for 30 minutes.

Remove from the oven and carefully remove the foil. Place the casserole back in the oven uncovered for 10-15 more minutes.

Ingredients

  • 14 oz Kielbasa
  • 4 medium potatoes
  • 2 medium onions
  • 14 oz bag of frozen mixed vegetables, thawed
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp each of your favorite combination of seasonings such as oregano, garlic powder, creole seasoning or Italian seasoning for example.
  • 8 Tbsp butter, one stick

Directions

  1. Preheat oven to 375 degrees. Spray a 9”x 13” casserole dish with oil.
  2. Place the thawed vegetables on the bottom of the dish.
  3. Peel and cut potatoes into 1” pieces then par boil for 10 minutes and drain.
  4. Place the potatoes on top of the vegetables. Add whatever seasoning your family loves.
  5. Slice the Kielbasa. Peel the onions and cut in larger than normal pieces.
  6. Place pats of butter evenly on top then seal the casserole dish with foil. Bake for 30 minutes.
  7. Remove from the oven and carefully remove the foil. Place the casserole back in the oven uncovered for 10-15 more minutes then serve.
